Coconut Chia Pudding

Creamy, lightly sweet, and incredibly easy to make, this coconut chia pudding is a simple make-ahead option with plenty of fibre and satisfying texture. Enjoy it as a snack or build it into a more substantial breakfast with Greek yogurt, protein, fruit, and other toppings.

Serves: 4 Prep time: 5 minutes Chill time: 4 hours or overnight


Ingredients

  • 1 can (13.5–15 oz / 400–445 mL) light coconut milk, shaken well

  • 6 tbsp chia seeds

  • 2 tbsp pure maple syrup or honey, or to taste

  • 1 tsp pure vanilla extract

  • Pinch of sea salt


Instructions

  1. Pour the coconut milk into a medium bowl. If it has separated in the can, whisk or blend until completely smooth.

  2. Add the chia seeds, maple syrup or honey, vanilla, and sea salt. Whisk thoroughly.

  3. Let the mixture sit for 5–10 minutes, then whisk again. This second stir is important to break up any chia clumps and keep the pudding evenly textured.

  4. Divide evenly among 4 individual jars or containers.

  5. Cover and refrigerate for at least 4 hours, preferably overnight.

  6. Stir before serving. If the pudding is thicker than you like, add a small splash of milk and stir until creamy.


Build Your Bowl

The chia pudding makes a great base. Use your toppings as an opportunity to add even more goodness:

  • Raspberries, blueberries, strawberries, or kiwi

  • Greek yogurt

  • Chopped walnuts, almonds, or pecans

  • Pumpkin seeds

  • Cacao nibs

  • Unsweetened coconut

  • Cinnamon

  • A spoonful of homemade Blueberry Chia Jam


If you're having this for breakfast: add a meaningful protein source. Greek yogurt mixed with a little vanilla protein powder is an easy way to turn this into a more complete and satisfying morning meal.

Storage

Keep covered in the refrigerator for up to 4–5 days. Add fresh fruit and crunchy toppings just before serving.

This is one of those recipes that's incredibly simple but gives you a great foundation to build from.

Chia seeds bring an impressive amount of fibre, coconut milk makes it creamy and satisfying, and fresh fruit lets you layer in even more nutrients and colour. It tastes like a treat, without the guilt, and sometimes that's exactly what we need.

Make a batch, pop it in the fridge, and then add the goodness depending on what you need that day.
