Chocolate-Covered Almond Butter Stuffed Dates

Sep 24
2 min read

Sweet, chewy Medjool dates stuffed with creamy almond butter and covered in dark chocolate. These little bites are rich and satisfying, with a combination of natural sweetness, healthy fats, fibre, and just enough chocolate to make them feel like a treat.

Keep a few in the freezer for those moments when you want a little something sweet.

Makes: 6 stuffed dates

Prep time: 10 minutes

Chill time: 20–30 minutes

Ingredients

  • 6 Medjool dates

  • 2 tbsp natural almond butter

  • 2 oz (about 55 g) dark chocolate, preferably 70% or higher

  • ½ tsp coconut oil, optional, for easier melting

  • Pinch of flaky sea salt, optional

Instructions

  1. Using a small knife, carefully slice each date lengthwise and remove the pit, keeping the date intact.

  2. Fill each date with approximately 1 teaspoon almond butter, then gently press the sides together.

  3. Melt the dark chocolate in a small microwave-safe bowl in 20-second intervals, stirring between each one until smooth. Stir in the coconut oil, if using.

  4. Dip each stuffed date into the melted chocolate. You can completely cover the date or dip just half if you prefer a little less chocolate.

  5. Place the dates on a parchment-lined plate or small baking sheet. Sprinkle with a tiny pinch of flaky sea salt, if desired.

  6. Refrigerate or freeze for 20–30 minutes, until the chocolate has set.

Enjoy straight from the fridge, or let a frozen date sit at room temperature for a few minutes before eating.

Add a Little More Goodness

Before the chocolate sets, try sprinkling the dates with:

  • Chopped almonds

  • Pumpkin seeds

  • Unsweetened shredded coconut

  • Cacao nibs

  • A tiny pinch of flaky sea salt

The almond butter adds some fat and protein alongside the carbohydrate in the date, while dark chocolate makes one little bite feel especially rich and satisfying.

Approximate Nutrition

Per stuffed date, based on 6:

  • Calories: ~140–155

  • Protein: ~3 g

  • Carbohydrates: ~20 g

  • Fibre: ~3 g

  • Fat: ~7–8 g

Nutrition is approximate and will vary depending on the size of the dates and the almond butter and chocolate used.

Why I Love This

Sometimes you just want something sweet, and there’s absolutely room for that.

I love that these start with a few simple whole-food ingredients: naturally sweet Medjool dates, almond butter, and dark chocolate. They're chewy, creamy, chocolatey, and just rich enough that one can really hit the spot.

No need to make dessert complicated.

Small changes. Big outcomes.
