Bedtime Coconut Chia Pudding

This creamy coconut chia pudding is a simple make-ahead evening snack designed to be satisfying without feeling too heavy. Chia seeds bring fibre and healthy fats, while added protein or collagen gives it a little more staying power overnight.

Makes: about 6 bedtime portions

Prep time: 5 minutes

Chill time: 4 hours or overnight


Ingredients

  • 1 can (13.5–15 oz) light coconut milk, shaken well

  • 6 tbsp chia seeds

  • 1–2 tbsp pure maple syrup or honey, to taste

  • 1 tsp pure vanilla extract

  • ½ tsp cinnamon

  • Pinch of sea salt

  • 1 scoop vanilla protein powder or collagen


Instructions

  1. Pour the coconut milk into a medium bowl. If it has separated in the can, whisk until smooth.

  2. Add the chia seeds, maple syrup or honey, vanilla, cinnamon, sea salt, and protein powder or collagen.

  3. Whisk thoroughly until everything is well combined.

  4. Let the mixture sit for 5–10 minutes, then whisk again to break up any chia clumps.

  5. Transfer to one airtight container and refrigerate for at least 4 hours, preferably overnight.

  6. Stir before serving. If the pudding is thicker than you like, add a small splash of milk and mix well.


Your Bedtime Portion

Keep the pudding in one container in the fridge and scoop out about ⅓ cup when you want it.

For a little extra staying power, stir in a small spoonful of nut butter if desired.

Enjoy approximately 30–60 minutes before bed.

  • A few fresh berries

  • Sprinkle of cinnamon

  • Chopped walnuts or almonds

  • Pumpkin seeds

  • Unsweetened coconut

  • Cacao nibs

Per ⅓ cup serving — based on 6 portions

Using light coconut milk, 1 tbsp maple syrup, and a typical scoop of protein powder:

  • Calories: ~110–130

  • Protein: ~5–7 g

  • Carbohydrates: ~9–11 g

  • Fibre: ~4–5 g

  • Fat: ~6–8 g

Nutrition will vary depending on the coconut milk and protein powder or collagen used.


Tips & Notes

  • Use 1 tbsp maple syrup for a lightly sweet version.

  • Letting the pudding sit overnight gives the chia more time to fully hydrate.

  • For a thicker pudding, add an extra ½–1 tbsp chia seeds.

  • Protein powder will make the pudding more filling than collagen, since collagen is not a complete protein.

  • Store in an airtight container in the refrigerator for 4–5 days.
