Lemon Herb Artichokes

A simple, bright, fibre-rich side dish made with artichoke hearts, lemon, herbs, olive oil, and hemp hearts. This is an easy way to add more fibre, flavour, and texture to lunch or dinner without making the meal feel complicated.

It works beautifully as a warm side dish, a salad add-on, or part of a protein-forward bowl.


Ingredients

Serves 1

  • ½ cup artichoke hearts

    Use frozen artichoke hearts, thawed, or canned artichoke hearts packed in water

  • 1 tsp extra virgin olive oil

  • 2 tsp fresh lemon juice

  • Pinch of salt

  • Black pepper, to taste

  • Fresh parsley or dill, chopped

  • 1 tsp hemp hearts

Optional for extra flavour:

  • Lemon zest

  • Pinch of garlic powder

  • Chili flakes

  • Extra herbs


Instructions

  1. Prepare the artichokes.

If using frozen artichoke hearts:Thaw and pat dry well before cooking. This helps them brown instead of steam.

If using canned artichoke hearts in water: Drain well, rinse gently if desired, and pat dry before adding to the pan. Canned artichokes are already softer, so they may need slightly less cooking time.

  1. Warm olive oil in a pan over medium heat.

  2. Add the artichoke hearts and sauté until soft and lightly golden.

For frozen artichokes: cook about 5–7 minutes. For canned artichokes: cook about 3–5 minutes.

  1. Add lemon juice, salt, pepper, and herbs.

  2. Toss gently and cook for another 1–2 minutes so the flavours come together.

  3. Sprinkle hemp hearts on top before serving.

  • Patting the artichokes dry helps improve texture.

  • Frozen artichokes tend to hold their shape better and may brown more easily.

  • Canned artichokes are softer and quicker, making them a great convenience option.

  • Lemon juice brightens the flavour, so don’t skip it.

  • Hemp hearts add a small protein boost and healthy fats.

  • Dill gives this more of a fresh Mediterranean flavour, while parsley keeps it light and classic.
