Coconut Energy Balls

A snack to satisfy your craving, and give you some nutritional goodness


Ingredients

  • 1/4 cup cold-pressed coconut oil, room temperature

  • 1/4 cup pure maple syrup

  • 1/3 cup cocoa or pure cocoa powder

  • pinch of Celtic salt

  • 1 cup raw pecans or walnuts, previously soaked and dehydrated

  • 2/3 cup shredded, unsweetened coconut


Instructions

Soak the nuts in filtered water for a few hours or overnight, drain, rinse and let dry.

Prepare a plate or small baking sheet with a piece of unbleached parchment paper.

In a large enough bowl, add coconut oil, maple syrup, and cocoa powder. Mix until well combined.

Stir in the remaining ingredients.

With your hands, form 3/4 inch round balls and place them on a prepared plate or small baking sheet.

Freeze the balls for 15 minutes to set.


Enjoy cold or thawed!
